During these bitter and cozy winter days, a warm bowl of soup feels like a blanket of comfort. It provides your body with the energy and also boosts immunity to fight against the viruses and shovel snow off the driveway! So, here are three homemade soups that are easy to make and tastes fantastic.

1.Tomato,Beetroot Soup

This soup is vibrant and bright, perfect for winters. Carrots and beetroot add flavor and sweetness to balance the tanginess from the tomatoes and also vibrant color to the soup making it absolutely eye pleasing, soul comforting. Here is the simple recipe.

Ingredients:

  1. - 1-2 carrots chopped
  2. - 3-4 tomatoes chopped
  3. - 1 small beetroot peeled and chopped
  4. - Green Chilies(optional)
  5. - Salt to taste
  6. - Cumin and red chilli powder for seasoning

Method:

Put chopped veggies, water and salt in a pressure cooker. Pressure cook for two whistles. Cool and strain. Blend boiled veggies in mixie and strain again nicely so that all fiber is there in soup. Heat strained soup. Add seasoning as per taste(cumin, red chili powder, salt) and serve hot.

2.Moong Soup

This healthy diabetic moong soup is rich in protein, iron and fibre. Guaranteed to rejuvenate you on a tiring day, it is made diabetic-friendly by using just a teaspoon of oil. Here is the simple recipe.

Ingredients:

  1. - 1/2 cup moong(soaked and drained for 8 hours).
  2. - 1 tsp oil
  3. - 1/2 tsp cumin seeds(jeera)
  4. - 1/4 tsp asafetida(hing)
  5. - 1/2 tsp chopped green chilies
  6. - 4 to 5 curry leaves(kadi patta)
  7. - salt to taste
  8. - 2 tsp lemon juice
  9. - A spring of coriander(dhania)

Method:

In a pressure cooker add 3 cups of water and moong(drained and soaked) and pressure cook the moong for 3 whistles. Do not drain the water and blend it till smooth. In a pan add 1 tsp oil and then add cumin seeds, hing and curry leaves and green chillies. Saute it. Add the blended moong mixture. Add the salt to taste. Cook for 4-5mins and add 1 cup of water and mix well. Add few drops of lemon juice and serve it hot garnished with a spring of coriander.

3.Palak/Spinach Soup

This spinach soup is a good way to include healthy greens in your diet and is low calorie too. Here is the recipe.

Ingredients:

  1. - 1.5 to 2 cups spinach (palak), chopped
  2. - 1/4 cup onions, chopped
  3. - 2 to 3 garlic cloves , finely chopped
  4. - 1 tablespoon gram flour (besan)
  5. - 1/4 teaspoon cumin powder
  6. - 1 tej patta (indian bay leaf) - small size
  7. - 2 cups water
  8. - 1 or 1.5 tablespoon olive oil or butter
  9. - black pepper powder as required
  10. - Salt as required
  11. - Cream for topping (optional)
  12. - Some freshly crushed black pepper or grated cheese or paneer/cottage cheese or cream for garnishing- optional

Method:

First rinse the palak leaves (spinach) very well in water. Then chop the palak leaves and keep aside. Heat oil or butter in a sauce pan. Add the bay leaf and fry for 2-3 seconds. Now add the chopped garlic and fry till the garlic is light browned or browned. Don't burn the garlic. Saute the garlic on a low flame. Add chopped onions and saute till the onions are softened. Add the chopped palak/spinach. Stir and season with black pepper and salt. Now add the besan or gram flour. Stir well and pour 2 cups water. Bring the mixture to a boil and then simmer for 3-4 minutes. Add cumin powder and stir well. Switch off the fire and let the soup mixture cool.

Making Spinach Soup- When the mixture's heat has reduced or has become warm, then blend with a hand blender or in a mixer till smooth. Remove the tej patta (indian bay leaf) while blending. Check the seasoning and add some more salt or pepper if required. If the soup looks thick, then add 1/4 or 1/2 cup water and stir. Keep the well blended soup back on the stove for simmering for 2-3 minutes. Serve spinach soup hot sprinkled with some freshly crushed black pepper or grated paneer, cheese or topped with some cream.
