3 EASY AND QUICK SALAD RECEPIES

Keeping our immune system healthy is top of everyone's mind right now with the flu and the coronavirus. With that in mind, why not feed ourselves food that actually boosts our immune system like these nutrient-rich salads. These salads are packed with fruits, veggies and nuts which contain nutrients like vitamin A, vitamin C, vitamin E, protein and zinc to help your immune system function properly and keep you healthy.

1.Mexican Salad- This salad is colorful, spicy and refreshing. This salad is a complete experience blend of textures and flavor. Its made with rajma, corn, tomatoes, panner and other goodies.

Ingredients:

  1. 1 cup-Boiled Red Rajma ( Kidney Beans)
  2. 1 cup-Sweet Corn Kernels
  3. 1/2 cup -Tomatoes (Remove the Pulp & chop finely)
  4. 1/2 cup-Processed cheese or Paneer
  5. 1/2 cup-Spring Onions
  6. 1 tbsp Coriander , chopped
  7. Salt to taste
  8. Nachos to top

For Dressing

  1. 2 tbsp Olive Oil
  2. 1 tbsp Lemon juice
  3. 1/2 tsp Salt
  4. 1/4 tsp Oregano
  5. 1/2 tsp Sugar
  6. 2 tsp Chilli Sauce
  7. Pinch of Black Pepper

Method:

Mix together all the ingredients of the dressing and whisk well. Keep aside. Mix Rajma, corns, tomatoes, cheese, coriander leaves, spring onion and salt. Pour dressing mix well and chill it. Before serving the salad top with some spring onion greens, coriander and nachos. Serve cold or at room temperature.

2.The Fruit Salad- Eating fruit provides health benefits — people who eat more fruits and vegetables as part of an overall healthy diet are likely to have a reduced risk of some chronic diseases. Fruits provide nutrients vital for health and maintenance of your body.

Ingredients:

  1. Fresh Peaches(3)
  2. 2 small or medium apples
  3. 1 large banana
  4. 1/4 pound seedless grapes
  5. 1 can pineapple chunks, juice reserved 20 ounces
  6. 2 tablespoons shredded coconut

For Dressing

  1. 1/4 cup reserved pineapple juice
  2. 2 tablespoons honey warmed
  3. Dash of ground cinnamon

Method:

Drain pineapple, reserving the juice. Remove core from apples and chop into bite sized pieces. Slice banana. Mix the apples, banana, grapes, pineapples, and coconut in a medium bowl. Add the honey to a small bowl and microwave for 10-15 seconds or until warm. Add the pineapple juice and dash of cinnamon and mix well. Pour over the fruit and stir gently to coat. Refrigerate until ready to serve.

3.Banana and Nut Salad- Nuts are a very popluar food. Despite being high on fat, they have a number of impressive health and weight benefits.

  1. 1 tablespoon Peanut Butter
  2. 2 bananas
  3. lettuce leaves
  4. chopped peanuts

For Dressing

  1. 1 tablespoon honey
  2. 1/4 cup mayonnaise
  3. lemon juice

Method:

Stir together peanut butter and honey in small bowl. Blend in mayonnaise or salad dressing. SLICE bananas. Dip in lemon juice. Arrange on lettuce leaves. Spoon peanut butter dressing over top. Sprinkle with peanuts and it is ready to be served.
